The Rookwood Toddy

.75 oz lemon

.75 oz Broken Clover Honey infused with Earl Grey

2 oz bourbon

Hot water

Garnish: lemon peel or slice

 

Build your cocktail in Rookwood Heritage Mug in the order listed above. Make sure your water is at least 205 degrees as you are adding it to cold liquid.

 

Honey Syrup

1/2 cup Rookwood Bourbon Infused Honey

1/2 cup water

1 tea bag of earl grey tea or 1 oz loose leaf earl grey tea. 

 

Add water and honey to a small pot over medium high heat. Whisk honey until it is dissolved in the water. Add tea, and take pot off heat and allow it to steep for 15 minutes. Strain. Store honey in the fridge in an airtight container for up to 1 month. Get creative and use other flavored teas to make a super flavorful honey. Chai tea, lavender infused earl grey, mint green tea all work really well!
